Classic Peking Duck Recipe
A duck - 1 pc. of about 2-3 kgs
half bottle of dry white wine - or 0.35 ml
Honey - 5 tablespoons
Soy sauce - 5 tablespoons
green onions - 2 bunches
black pepper, water, salt, flour, ginger powder

Unfreeze the duck, cut off the upper phalanx of the wings, remove the fat from the neck and tail. Pour boiling water over the duck, holding its neck. Dry it with a towel. Rub with the wine and salt - inside and out. Put in refrigerator for 10 hours. Then lubricate the duck inside and outside with honey. Put it in the refrigerator again for 10-12 hours.
Put on the grid, under which there should be a pan, with the breast up. Pour a glass of cold water in the pan. Wrap it all together with foil. The duck should be cooked in the oven at 190 degrees for 1 hour.
Mix the ginger, sesame oil, pepper and soy sauce. You should get a thick consistency. Put it to the oven, preheated to 260 degrees for 20 minutes.
Then rub the duck with a mixture of soy sauce and honey, then cook it on the bottom oven shelf to form a crispy crust. Serve with the onions. Cut into pieces at the table.
Cooked Duck & Apple Sauce
Cut the duck into pieces, cook for 30 minutes with vegetables and garlic, salt and pepper.
Boil three untreated apples in duck broth for 15 minutes, then pass through a sieve. Add 120 grams of sour cream and 1 teaspoon flour to the apple sauce, salt and sugar to taste. Stir and boil for 5 minutes more.
Put cooked duck slices into the sauce, stir it. Serve with rice or potatoes.
