The Recipe of Roast Goose & Oranges
Goose - 1 pc., of about 3 kgs.
Oranges - 3 pc.
Carrots - 1 pc.
800 ml of chicken broth.
Onions - 2 heads.
Parsley, thyme, herbs, salt and pepper - to taste.
Gut, wash and dry the goose, rub with salt and pepper inside and out.
Chop parsley roots and carrots, cut oranges into 4 pieces, chop onions. Mix everything, add the greens and again mix all the ingredients well. Stuff the goose with the mixture, roast in the oven for 2 hours at a temperature of 200 degrees, basting periodically with duck juice. Take it out in 2 hours and sue the goose, cut into serving pieces. Collect duck juices which is left from roasting in the pan, add chicken broth, pieces of goose, season to taste and simmer for another 20 minutes.
